For the Chicken Marinade:

300g (10.5oz) chicken, thinly sliced

1 tablespoon soy sauce

½ teaspoon cornstarch

1 teaspoon sugar

2 teaspoons oil

½ onion, thinly sliced

2 bell peppers (green and red), thinly sliced

2-3 garlic cloves, minced

1 teaspoon chili flakes (optional)

For the Stir Fry Sauce:

1 tablespoon soy sauce

1 teaspoon dark soy sauce

1 teaspoon cooking wine
-
3 tablespoons oyster sauce

2 tablespoons water
-
2 teaspoons sugar

½ teaspoon cornstarch

Instructions

Marinate the Chicken: Combine the sliced chicken with soy sauce, cornstarch, sugar, and oil. Mix well and set aside to marinate.

Prepare the Vegetables: In a hot wok with oil, stir fry the sliced onions and bell peppers for a few seconds until slightly tender. Remove the vegetables from the wok and set them aside.

Cook the Chicken: Add a little more oil to the same wok. Add the marinated chicken and stir fry until browned.

Add Flavor: Add the minced garlic and chili flakes to the chicken and continue to stir fry.

Add the Sauce and Vegetables: Pour the prepared stir fry sauce over the chicken. Add the cooked vegetables back into the wok.

Finalize the Stir Fry: Toss everything together for a few minutes, allowing the sauce to thicken and coat all the ingredients. The stir fry is ready when the sauce is glossy.
